- 1 Poblano Pepper seeds removed
- 1/2 cup cilantro leaves
- 1/2 red onion
- 1 roma tomato
- 2 pounds tomatillos husks removed
- 2 cloves garlic
- 1 teaspooncumin ground
- 2 fresh lime juice
- 1/2 teaspoon dried oregano
- 2 fresh lemon juice
- Salt and freshly ground black pepper
- 1-2 jalapeño peppers stemmed seeded
- 4 oz can Fire-Roasted Green Chilis
Step 1: Preheat the Oven and Prepare the Ingredients

Step 3: Prepare the Salsa Ingredients
While the tomatillos and tomato are roasting, prepare the other salsa ingredients. Stem and halve the jalapeño peppers, and chop the red onion into large chunks. Peel the garlic cloves and measure out the cilantro leaves.
Step 4: Blend the Ingredients
Once the roasted tomatillos and tomato are done, transfer them to a food processor. Add the raw tomatillos, jalapeños, red onion, garlic, cilantro, ground cumin, and dried oregano to the food processor.
Pulse the mixture until it reaches your desired consistency, ensuring it’s mostly smooth with some texture.
