Ingredients
  

  • 1 Poblano Pepper seeds removed
  • 1/2 cup cilantro leaves
  • 1/2 red onion
  • 1 roma tomato
  • 2 pounds tomatillos husks removed
  • 2 cloves garlic
  • 1 teaspooncumin ground
  • 2 fresh lime juice
  • 1/2 teaspoon dried oregano
  • 2 fresh lemon juice
  • Salt and freshly ground black pepper
  • 1-2 jalapeño peppers stemmed seeded
  • 4 oz can Fire-Roasted Green Chilis

Instructions
 

Step 1: Preheat the Oven and Prepare the Ingredients

  • Begin by preheating your oven to 500 degrees Fahrenheit. While the oven is heating up, prepare your ingredients. Set aside 4 raw tomatillos and halve the remaining tomatillos and roma tomato. Line a baking sheet with aluminum foil for easy cleanup.

Step 2: Roast the Tomatillos and Tomato

  • Place the halved tomatillos and roma tomato cut-side down on the prepared baking sheet. Roast them in the preheated oven until they begin to toast, which should take approximately 20 minutes. Roasting will enhance the flavors and bring out the natural sweetness of the vegetables.

Step 3: Prepare the Salsa Ingredients

  • While the tomatillos and tomato are roasting, prepare the other salsa ingredients. Stem and halve the jalapeño peppers, and chop the red onion into large chunks. Peel the garlic cloves and measure out the cilantro leaves.

Step 4: Blend the Ingredients

  • Once the roasted tomatillos and tomato are done, transfer them to a food processor. Add the raw tomatillos, jalapeños, red onion, garlic, cilantro, ground cumin, and dried oregano to the food processor.
  • Pulse the mixture until it reaches your desired consistency, ensuring it’s mostly smooth with some texture.

Step 5: Adjust the Spiciness

  • Taste the salsa and adjust the spiciness according to your preference. You can add more jalapeños or seeds for extra heat. Keep in mind that the salsa will taste spicier when warm and without food, so consider this when adjusting the heat level.

Step 6: Season and Add Citrus

  • Once you’re satisfied with the spiciness, add the fresh lemon and lime juices to the salsa. Season with salt and freshly ground black pepper to taste. Start with smaller amounts and adjust as needed to suit your taste preferences.

Step 7: Enhance Flavor (Optional)

  • For an additional layer of flavor, you can add a halved Poblano pepper with the seeds removed and a small can of fire-roasted green chilis to the salsa. Blend briefly to incorporate these ingredients and enhance the smoky flavor profile.

Step 8: Serve or Chill

  • Your tomatillo green chili salsa chipotle is now ready to be served! Enjoy it immediately with tortilla chips or as a topping for your favorite Mexican dishes.
