Prep Time 40 minutes mins
Total Time 40 minutes mins
- 1 tsp Onion Powder
- Slices of Jack Cheese
- 1 Onion
- 1 lb Chicken Breast
- 8 oz Mushrooms
- 1/2 tbsp Garlic
- 1 tbsp Lemon Juice
- 1/2 cup Low Sodium Soy Sauce
- 1/4 tsp Salt
- 1/2 tsp Pepper
- 1 tbsp Olive Oil
- 1 tsp Smoked Paprika
- 1/2 Stick Butter
- 1 tbsp Worcestershire Sauce
Step 1: Prepare the Chicken
Step 2: Season the Chicken
In a small bowl, combine the smoked paprika, pepper, salt, and onion powder. Sprinkle this seasoning mixture evenly on both sides of the chicken breasts, pressing it into the meat to ensure maximum flavor penetration.
Step 3: Sear the Chicken
Heat a tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, carefully place the seasoned chicken breasts in the skillet. Sear the chicken for about 3-4 minutes on each side, or until golden brown. This will help to lock in the juices and develop a delicious crust on the chicken.
Step 4: Cook the Onions, Garlic, and Mushrooms
While the chicken is searing, thinly slice the onion and mushrooms. In the same skillet used to sear the chicken, melt the butter over medium heat. Add the sliced onions and garlic, and sauté for about 2-3 minutes, or until the onions become translucent and slightly caramelized.
Then, add the mushrooms and continue to cook for an additional 4-5 minutes, or until the mushrooms have softened and released their moisture.
Step 5: Prepare the Sauce
Once the mushrooms have cooked down, pour in the soy sauce, Worcestershire sauce, and lemon juice. Stir well to combine all the flavors and allow the sauce to simmer for a few minutes, allowing it to thicken slightly.
Step 6: Smother the Chicken
Return the seared chicken breasts to the skillet with the mushroom and onion sauce. Spoon the sauce over the chicken, ensuring that it is well-coated.
Reduce the heat to low, cover the skillet, and simmer for about 10-12 minutes, or until the chicken is cooked through and the flavors have melded together.
Step 8: Serve
Carefully transfer the smothered chicken to a serving plate. Spoon some extra sauce over the top, if desired, and garnish with fresh parsley for a pop of color.
Serve the chicken with your favorite side dishes, such as mashed potatoes and steamed vegetables, and savor each bite of this flavorful masterpiece.
- Pound the chicken breasts: Pounding the chicken breasts ensures that they cook evenly and remain tender throughout.
- Use low sodium soy sauce: Using low sodium soy sauce allows you to control the saltiness of the dish and prevents it from becoming overly salty.
- Let the chicken rest before slicing: Allow the cooked chicken to rest for a few minutes before slicing it. This helps to retain the juices and keeps the chicken moist.
- Adjust the spices to your taste: Feel free to adjust the amount of spices used in the recipe according to your personal preference. Add more paprika for a smokier flavor or increase the heat with some cayenne pepper if you like it spicy.
- Experiment with different cheeses: While the recipe calls for Jack cheese, you can also try using other varieties such as cheddar, mozzarella, or Swiss for a different flavor profile.
