Let me tell you about my latest culinary adventure. I recently set out to recreate Taco Bell’s famous chicken soft tacos at home.

Equipment

Ingredients
  

  • 2 boneless skinless chicken breast halves
  • 1 tablespoon of lime juice
  • 1/2 cup of water
  • 1 teaspoon of soy sauce
  • 1 teaspoon of sea salt
  • 1 teaspoon of brown sugar
  • 1/4 teaspoon of liquid smoke essence
  • 1/4 teaspoon of freshly ground black pepper
  • 1/4 teaspoon of smoked paprika
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of garlic powder
  • 6 6- inch low-fat flour tortillas
  • 3/4 cup of shredded iceberg lettuce
  • 1/2 cup of reduced-fat shredded Cheddar cheese
  • 1 medium tomato finely diced

Instructions
 

Step 1: Prepare the Chicken Marinade

  • In a large bowl, mix the lime juice, water, soy sauce, sea salt, brown sugar, liquid smoke, black pepper, smoked paprika, onion powder, and garlic powder. Add the chicken breasts to the bowl and ensure they are well-coated. Let the chicken marinate for at least 30 minutes, but for optimal flavor, consider marinating it overnight.

Step 2: Cook the Chicken

  • Preheat a grill or grill pan over medium heat. Remove the chicken from the marinade, allowing any excess to drip off, and place it on the grill. Cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Once done, let the chicken rest for 5 minutes before slicing thinly.

Step 3: Warm the Tortillas

  • While the chicken rests, warm the tortillas. You can do this directly over a grill flame, or in a dry skillet over medium heat. Flip them once each side is warmed and slightly golden. Be careful not to burn them!

Step 4: Assemble the Tacos

  • Lay a tortilla flat and add a portion of shredded lettuce. Place several slices of chicken on top, followed by a sprinkle of shredded Cheddar and a spoonful of diced tomatoes. Repeat for each tortilla.

Step 5: Serve

  • Serve immediately while the tortillas are still warm and the cheese is freshly melted.

Notes

  • Marinating Time: The longer you marinate the chicken, the more flavorful it will be. If you’re in a hurry, 30 minutes will do, but overnight is best.
  • Cooking Option: If you don’t have a grill, you can bake the chicken at 400°F (200°C) for 20-25 minutes or until it reaches the desired internal temperature.
  • Cheese: Don’t have Cheddar? Monterey Jack or a Mexican cheese blend works just as well.
  • Lettuce: Use any leafy greens you have on hand if iceberg lettuce isn’t available.
  • Customization: Feel free to add other taco toppings like avocado slices, jalapeños, or salsa.
