Step 1: Prepare Your Vegetables

  • First, heat the vegetable oil in a skillet over medium heat. Throw in the sliced onions and give them a gentle sauté, stirring occasionally. The goal here is to soften them and allow their natural sugars to shine through, creating a slightly sweet base for your filling. You’ll want to take about 5-7 minutes for this step.
  • Next, add in the sliced green bell pepper and jalapeños (if using). Stir them around for another couple of minutes until they start to soften. Season everything with salt and pepper. At this point, your kitchen should smell utterly delicious.

Step 2: Assemble Your Filling

  • Once your veggies are ready, it’s time for the main event—adding the roast beef and mushrooms. Mix in the sliced mushrooms and allow them to warm up just a bit, so they blend into the mixture.
  • Finally, toss in the roast beef, stirring just long enough to heat it through without overcooking. Remove the skillet from the heat.

Step 3: Roll Out the Dough
