- 1 can black beans rinsed and drained
- 1 can sweet corn drained
- 1 cup diced bell pepper
- 1 cup finely chopped red onion
- 1 cup halved cherry or grape tomatoes
- 12 oz rotini pasta or other medium-shaped noodles
- 2 cups grilled chicken breast diced
- 1/2 cup fresh cilantro chopped
- 1/2 tsp ground cumin
- 1/4 cup fresh lime juice
- 1 cup creamy chipotle ranch dressing
Step 3: Prepare the Vegetables
While the pasta is cooking, chop the bell pepper, red onion, and tomatoes. Aim for uniform sizes, making everything delightful to the eye and easy to eat. Mix them in a large bowl along with the black beans and corn.
