Ingredients
  

  • High smoke point oil for frying such as canola or peanut oil
  • 1 large sweet or yellow onion sliced into thick rings about 1/2-inch wide
  • 1 cup all-purpose flour
  • 1/2 tablespoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1 cup whole milk
  • 1 tablespoon apple cider vinegar
  • 1/2 cup Greek yogurt

Instructions
 

Step 1: Prepare the Onions

  • Start by peeling the large onion and slicing it into thick rings approximately 1/2-inch wide. Keep those rings separate, so they’re ready for battering.

Step 2: Make the Buttermilk Mixture

  • In a bowl, combine the milk and apple cider vinegar. Let it sit for about 5-10 minutes. This will create a buttermilk substitute, giving that classic, tangy flavor.

Step 3: Mix the Dry Ingredients

  • In another bowl, whisk together the flour, sea salt, black pepper, smoked paprika, and onion powder. This blend adds depth and flavor that takes the onion rings to the next level.

Step 4: Dip the Rings

  • Take each onion ring and dip it into the buttermilk mixture, ensuring it’s coated well. Next, transfer the ring to the flour mixture, coating it evenly. For an extra crunch, dip it back into the buttermilk and flour one more time.

Step 5: Heat the Oil

  • Heat the oil in a deep frying pan over medium-high heat. Use enough oil so that the rings can float. Aim for a temperature of around 350°F. This is crucial for achieving that perfect golden color.

Step 6: Fry the Rings

  • Fry the rings in batches. This prevents overcrowding. Fry for about 3-4 minutes or until they are golden brown. Use a slotted spoon to remove them, shaking off excess oil.

Step 7: Drain and Serve

  • Place the fried onion rings on a plate lined with paper towels. This absorbs any excess oil. Serve immediately with your favorite sauce.
