When I think of getting a good plate of wings, Zaxby’s boneless wings spring to mind. Picture this: you’re at a gathering, maybe flipping through channels during a big game, and suddenly those crispy, delightful bites come into view.

Equipment

Ingredients
  

  • 3 lbs chicken breast cut into bite-sized pieces or strips

Breading:

  • 3 cups all-purpose flour
  • 1 Tbsp seasoned salt such as Lawry’s
  • 1 Tbsp sea salt
  • 1 tsp Adobo seasoning
  • 1 Tbsp freshly ground black pepper
  • ½ tsp smoked paprika to enhance the flavor
  • 1 tsp sweet paprika
  • 1 tsp garlic powder and onion powder
  • 2 Tbsp brown sugar for a slight caramelized taste
  • ½ tsp baking powder instead of baking soda

Wet Batter:

  • 4 large eggs
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • ¼ cup buttermilk
  • 1 Tbsp hot sauce optional, for a slight kick

Instructions
 

Step 1: Prepare the Chicken

  • Start with fresh chicken breast. Cut into small, manageable pieces. This ensures an even cook and delightful bites.

Step 2: Whisk the Wet Batter

  • In a large bowl, whisk together the eggs, flour, baking powder, buttermilk, and optional hot sauce. Mix until smooth and well-combined. This batter will give your wings that essential crispy coating.

Step 3: Combine the Breading Ingredients

  • In another bowl, mix together the flour, seasoned salt, sea salt, Adobo seasoning, black pepper, smoked paprika, sweet paprika, garlic powder, onion powder, brown sugar, and baking powder. Toss well to ensure an even mix.

Step 4: Coat the Chicken

  • Dip each piece of chicken into the wet batter, allowing any excess to drip off. Roll the chicken in the breading mixture until each piece is well-coated.

Step 5: Heat the Oil

  • In a large skillet or deep fryer, heat oil to 350°F (175°C). Use enough oil to submerge the chicken pieces.

Step 6: Fry the Chicken

  • Carefully place the coated chicken into the hot oil. Fry in small batches to maintain oil temperature. Cook until golden brown and cooked through. This usually takes about 5-7 minutes.

Step 7: Drain and Sauce

  • Remove the wings and place them on paper towels to drain excess oil. While still hot, toss them in your choice of Zaxby’s sauce.

Step 8: Serve

  • Grab some plates and dig in! Serve with your favorite dipping sauces and plenty of napkins.
