Growing up, desserts were a highlight in our household. My mother often brought home delightful treats from local eateries, sparking a love for sweet creations. One treat that always stood out to me was the Zaxby brownie, famous for its dense texture and luscious flavor.

Ingredients
  

  • 2 large eggs
  • ½ cup unsweetened applesauce
  • 1 tablespoon coconut oil melted
  • 2 tablespoons filtered water
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon sea salt
  • 1 package of Kodiak Cakes chocolate brownie mix

Optional Mix-ins & Toppings:

  • Dark chocolate chunks
  • Swirls of creamy peanut butter
  • Chopped toasted walnuts

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). This is the perfect temperature for getting those brownies just right. While the oven heats up, you can prepare the batter.

Step 2: Prepare Your Mixing Bowl

  • In a large mixing bowl, combine the eggs, applesauce, melted coconut oil, filtered water, vanilla extract, and sea salt. Whisk these ingredients together until smooth and well blended.

Step 3: Add the Brownie Mix

  • Once your wet ingredients are ready, gradually add the Kodiak Cakes chocolate brownie mix into the bowl. Stir gently to incorporate the mix without over-mixing. The batter should look thick and chocolaty—this is your time to shine!

Step 4: Fold in Optional Ingredients

  • If you want to amp up the flavor, fold in any optional ingredients like dark chocolate chunks or nuts. Make sure they’re evenly distributed throughout the batter for that perfect bite.

Step 5: Pour into Prepared Pan

  • Grease an 8×8 inch baking pan or line it with parchment paper. This will help with easy removal. Pour the brownie batter into the pan, spreading it evenly with a spatula.

Step 6: Bake in the Oven

  • Place the pan in the preheated oven and bake for 20-25 minutes. You want the edges to look set while the middle remains a bit soft.
  • The toothpick test is key here—insert it into the center, and if it comes out with a few moist crumbs, you are golden!

Step 7: Cool and Slice

  • Allow the brownies to cool before cutting them into squares. This makes slicing much easier and gives them a chance to set up a bit more.
