- 2 teaspoons Salt for draining water
- 6 Mini Cucumbers or Persian Cucumbers
For the Dressing:
- 1 teaspoon Sesame Oil
- 1 tablespoon Rice Vinegar or White Vinegar
- 2 cloves Garlic minced
- 1 tablespoon Regular Soy Sauce
- 2 tablespoons Green Onion finely sliced
- 1 tablespoon Chinese Chili Oil
- 1 teaspoon Sesame Seeds
- 1 tablespoon White Granulated Sugar
Step 1: Preparing the Cucumbers
Step 2: Draining the Cucumbers
Step 3: Making the Dressing
In a bowl, combine regular soy sauce, minced garlic, rice vinegar or white vinegar, Chinese chili oil, white granulated sugar, sesame oil, sesame seeds, and finely sliced green onion. Stir well to create a harmonious blend of flavors.
Step 4: Marinating the Cucumbers
Once the cucumbers have drained, gently pat them dry with a paper towel. Transfer the cucumber spirals to a large bowl and pour the dressing over them. Toss the cucumbers in the dressing, ensuring they are evenly coated. Allow the salad to marinate for at least 30 minutes, allowing the flavors to meld together.
Step 5: Garnishing and Serving
- – For a spicier version, you can increase the amount of Chinese chili oil according to your preference.
- – To make this salad more visually appealing, consider using a combination of green and purple mini cucumbers.
- – If you don’t have a spiralizer, you can use a sharp knife to create thin cucumber strips, giving a similar effect.
