Equipment

  • Large soup pan
  • Knife and cutting board for chopping vegetables
  • Spoon or spatula for stirring
  • Strainer or colander

Ingredients

  • 1 can Celery Soup
  • 2 medium onion
  • Shredded cheddar chives and bacon bits for topping
  • Salt and pepper to taste
  • cup whole milk
  • 7 large yellow potatoes
  • 2 tablespoons butter melted
  • 1 can Cream Of Mushroom
  • 1 tsp garlic powder
  • 8 oz cream cheese
  • 2 cups chicken or vegetable broth

Instructions

Step 1: Prepare the Potatoes and Onion

  • Begin by peeling and dicing the yellow potatoes and the large onion. Take a large soup pan and add the diced potatoes and onions to it. Fill the pan with water until the vegetables are submerged.

Step 2: Cook the Potatoes and Onion

  • Place the soup pan on the stove over medium heat. Allow the potatoes and onions to cook in the water until they are tender when pierced with a fork. This process may take around 15-20 minutes.

Step 3: Drain the Potatoes and Onions

  • Once the potatoes and onions are cooked, carefully strain them to remove any excess water. Return the strained potatoes and onions to the soup pan.

Step 4: Add Milk and Cream Cheese

  • Pour the milk into the soup pan with the cooked potatoes and onions. Add the cream cheese as well. Stir the mixture thoroughly until the cream cheese is completely melted and blended with the milk.

Step 5: Incorporate Broth, Soups, Butter, and Seasonings

  • Next, remove the soup pan from the heat. Add the broth, the cream of mushroom soup, celery soup, melted butter, and garlic powder to the potato mixture. Stir everything together until all the ingredients are well combined.

Step 6: Adjust Seasonings

  • Taste the soup and season it with salt and pepper according to your preference. Feel free to adjust the seasoning levels to suit your taste buds. Stir the soup well to ensure the seasonings are evenly distributed.

Step 7: Serve and Garnish

  • Once the soup is seasoned to your liking, it’s ready to be served. Ladle the creamy potato soup into bowls. If desired, you can garnish each serving with shredded cheddar cheese, bacon bits, and chopped chives for added flavor and visual appeal.

Step 8: Enjoy!

  • Serve the Rafferty’s potato soup piping hot and savor its comforting warmth and delicious flavors. Pair it with some crusty bread or a side salad for a satisfying and hearty meal.

Notes

  • For a smoother texture, use an immersion blender to blend the soup to your desired consistency.
  • Customize the toppings to your preference, such as adding additional bacon bits or a dollop of sour cream.
  • To enhance the flavor profile, consider adding a splash of Worcestershire sauce or a sprinkle of smoked paprika.
  • If reheating leftovers, add a splash of milk or broth to maintain the soup’s creamy texture.
  • For a lighter version, substitute low-fat cream cheese and milk for a healthier twist.
