  • 3 Jumbo Eggs beaten
  • 4 cups Bisquick or Jiffy Baking Mix
  • 1/4 cup Melted Vegetable Shortening or Margarine room temperature
  • 2 1/2 cups Club Soda room temperature

Instructions
 

Step 1: Gather all the ingredients and equipment you’ll need.

  • To make Perkins pancakes, you’ll need the following ingredients:
  • – 4 cups Bisquick or Jiffy baking mix
  • – 3 jumbo eggs (beaten)
  • – 2 1/2 cups club soda (room temperature)
  • – 1/4 cup melted vegetable shortening or margarine (room temperature)
  • – Vegetable oil (for cooking)
  • For equipment, you’ll need a large mixing bowl, a whisk or fork for beating the eggs, and a griddle or non-stick pan for cooking the pancakes.

Step 2: Combine the Bisquick or Jiffy baking mix, beaten eggs, club soda, and melted vegetable shortening or margarine.

  • In the large mixing bowl, add the 4 cups of Bisquick or Jiffy baking mix. Create a well in the center of the mix and pour in the beaten eggs, club soda, and melted vegetable shortening or margarine. Using the whisk or fork, gently stir the ingredients together until just combined. Be careful not to overmix, as this could result in denser pancakes.

Step 3: Heat the griddle or non-stick pan and grease it with vegetable oil.

  • Place the griddle or non-stick pan over medium heat and allow it to preheat. Once hot, lightly grease the cooking surface with vegetable oil. This will prevent the pancakes from sticking and ensure an even cooking process.

Step 4: Pour the pancake batter onto the greased griddle or pan.

  • Using a ladle or measuring cup, pour the pancake batter onto the hot griddle or pan. Aim for a circular shape of about 4-5 inches in diameter. Cook multiple pancakes at a time if your cooking surface allows.

Step 5: Cook the pancakes until bubbles form on the surface.

  • Allow the pancakes to cook until small bubbles start to form on the surface. This is an indication that the bottom side is ready to be flipped. It usually takes around 2-3 minutes, depending on the heat of your cooking surface.

Step 6: Flip the pancakes and cook the other side.

  • Using a spatula, carefully flip the pancakes to cook the other side. Cook for another 1-2 minutes until the pancakes are golden brown and fully cooked through.

Step 7: Repeat steps 4-6 until all the batter is used.

  • Continue pouring the pancake batter onto the griddle or pan and following the cooking process until all the batter is used. This recipe should make a generous amount of pancakes, perfect for feeding a hungry breakfast crowd or for leftovers to enjoy throughout the week.

Notes

  • Use room temperature club soda: Room temperature club soda helps create a light and airy texture in the pancakes. Cold club soda may result in denser pancakes.
  • Don’t overmix the batter: Overmixing can lead to tougher pancakes. Stir the ingredients until just combined for fluffy results.
  • Adjust the cooking temperature: If your pancakes are cooking too quickly or too slowly, adjust the heat accordingly. The perfect pancake should have a golden brown exterior and a fluffy interior.
  • Add some flavorings: While the classic Perkins pancake recipe is delicious on its own, you can add some extra flavor by incorporating ingredients such as vanilla extract, cinnamon, or even chocolate chips into the batter.
