Equipment

  • Oven
  • Baking sheet
  • Mixing bowl
  • Small bowl
  • Whisk or spoon (for mixing spice blend)
  • Parchment paper (optional)
  • Serving platter

Ingredients

  • 1/2 teaspoon cinnamon
  • 3 pounds potatoes cut into 1-inch chunks
  • 2 teaspoons cumin
  • 1/2 teaspoon turmeric
  • 1/8 teaspoon cayenne pepper
  • ½ teaspoon Vegeta chicken or vegetable stock powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • Juice of 1 large lemon
  • if you want it spicy add 2 teaspoons of Harissa paste
  • 1 teaspoon paprika
  • 1-2 tablespoons olive oil
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon salt

Instructions

Step 1: Preheat the Oven

  • Begin by preheating your oven to a high temperature of 450 degrees Fahrenheit (approximately 230 degrees Celsius). This ensures the potatoes cook quickly and develop a crispy exterior.

Step 2: Prepare the Spice Blend

  • In a small bowl, combine the cumin, turmeric, cinnamon, cayenne pepper, paprika, garlic powder, salt, pepper, and olive oil. Stir vigorously until all the spices are well incorporated with the oil, forming a fragrant and flavorful blend.

Step 3: Coat the Potatoes

  • Place the diced potatoes in a large mixing bowl. Pour the prepared spice blend over the potatoes and toss gently until each piece is evenly coated with the aromatic mixture. Take care to ensure all the potatoes receive a generous coating of spices.

Step 4: Arrange on Baking Sheet

  • Lightly grease a baking sheet or line it with parchment paper to prevent sticking. Spread the seasoned potatoes out in a single layer on the baking sheet, making sure they are spaced apart to allow for even cooking and crispiness.

Step 5: Roast in the Oven

  • Place the baking sheet with the seasoned potatoes into the preheated oven. Roast them for about 20-25 minutes, or until they are golden brown and crispy on the outside, remembering to flip them halfway through the cooking time to ensure uniform browning.

Step 6: Add Final Touches

  • Once the potatoes are roasted to perfection, remove them from the oven. Sprinkle the chopped fresh cilantro over the top for a burst of vibrant color and flavor. Squeeze the juice of one large lemon over the potatoes to add a refreshing citrusy zing.

Step 7: Optional Enhancements

  • For an extra depth of flavor, consider adding ½ teaspoon of Vegeta chicken or vegetable stock powder to the roasted potatoes. If you prefer a spicy kick, mix in 2 teaspoons of Harissa paste to the spice blend before coating the potatoes.

Step 8: Serve and Enjoy

  • Transfer the Moroccan roast potatoes to a serving platter and serve them hot alongside your favorite main dish. These flavorful and aromatic potatoes are sure to impress with their bold Moroccan-inspired spices and irresistible crispiness.

Notes

  • – For a touch of freshness, sprinkle chopped fresh cilantro over the roasted potatoes before serving.
  • – Squeeze fresh lemon juice over the potatoes just before serving to enhance the flavors.
  • – If you prefer a spicier kick, add 2 teaspoons of Harissa paste to the spice mixture.
  • – Feel free to customize the spice blend to suit your preferences – don’t be afraid to experiment!
  • – To prevent the potatoes from sticking to the baking sheet, make sure to line it with parchment paper or aluminum foil.
