Ingredients
  

  • 4 tbsp. fresh chives finely chopped
  • 2 cups bourbon
  • 4-8 salmon fillets skinless and clean
  • 4 tbsp. brown sugar
  • 2 pinches of aromatic garlic powder
  • 2 dashes of sea salt
  • ½ cup pineapple juice
  • 4 tbsp. soy sauce
  • 2 dashes of freshly ground black pepper
  • 2 tbsp. Extra virgin olive oil

Instructions
 

STEP 1- Marinate the Salmon:

  • Place the salmon fillets in a shallow dish.
  • In a bowl, mix together bourbon, golden brown sugar, garlic powder, sea salt, and half of the chopped chives.
  • Pour the bourbon mixture over the salmon, making sure each fillet is well-coated.
  • Cover the dish and refrigerate for at least 30 minutes to let the flavors infuse.

STEP 2 – Prepare the Bourbon Glaze:

  • In a small saucepan, combine the remaining bourbon mixture from the marination with pineapple juice, soy sauce, and black pepper.
  • Simmer over medium heat until the mixture thickens into a glaze, stirring occasionally. This may take about 10-15 minutes.

STEP 3 – Cook the Salmon:

  • Preheat your oven to 400°F (200°C).
  • Heat olive oil in an oven-safe skillet over medium-high heat.
  • Remove the salmon from the marinade, letting excess liquid drip off, and place the fillets in the skillet.
  • Sear each side for 2-3 minutes until golden brown.

STEP 4 – Bake the Salmon:

  • Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.

STEP 5 – Serve:

  • Plate the salmon fillets and drizzle the bourbon glaze over them.
  • Garnish with the remaining chopped chives.
  • Optionally, serve over a bed of rice or with steamed vegetables.

Notes

  • Ensure you use fresh and high-quality salmon fillets to achieve the best flavor.
  • If you prefer a sweeter profile, you can add a drizzle of honey to the marinade.
