- 4 tbsp. fresh chives finely chopped
- 2 cups bourbon
- 4-8 salmon fillets skinless and clean
- 4 tbsp. brown sugar
- 2 pinches of aromatic garlic powder
- 2 dashes of sea salt
- ½ cup pineapple juice
- 4 tbsp. soy sauce
- 2 dashes of freshly ground black pepper
- 2 tbsp. Extra virgin olive oil
STEP 1- Marinate the Salmon:
Place the salmon fillets in a shallow dish.
In a bowl, mix together bourbon, golden brown sugar, garlic powder, sea salt, and half of the chopped chives.
Pour the bourbon mixture over the salmon, making sure each fillet is well-coated.
Cover the dish and refrigerate for at least 30 minutes to let the flavors infuse.
STEP 2 – Prepare the Bourbon Glaze:
In a small saucepan, combine the remaining bourbon mixture from the marination with pineapple juice, soy sauce, and black pepper.
Simmer over medium heat until the mixture thickens into a glaze, stirring occasionally. This may take about 10-15 minutes.
STEP 3 – Cook the Salmon:
Preheat your oven to 400°F (200°C).
Heat olive oil in an oven-safe skillet over medium-high heat.
Remove the salmon from the marinade, letting excess liquid drip off, and place the fillets in the skillet.
Sear each side for 2-3 minutes until golden brown.
