Mango Kalakand With Ricotta Cheese

Indulging in a rich and creamy dessert is a pleasure that no one can resist. And when that dessert combines the tropical sweetness of mangoes with the smoothness of ricotta cheese, it becomes truly irresistible.

Ingredients
  

  • 1 tbsp of milk powder
  • 1 cup of pistachios chopped
  • 2 tsp of cardamom powder
  • ½ can of sweetened condensed milk
  • 3 cups of fresh mango pulp
  • ½ kg of fresh unsalted paneer grated or ricotta cheese as a substitute
  • 1 silver varq for garnishing
  • 1 cup of skimmed milk

Instructions
 

Step 1: Prepare the Mango Kalakand Mixture

  • Firstly, take a non-stick pan and heat it on low flame. Add the fresh mango pulp and cook it for a few minutes until it thickens slightly. If you are using canned or frozen mango pulp, make sure to thaw it before adding it to the pan.

Step 2: Add the Condensed Milk and Ricotta Cheese

  • Once the mango pulp has thickened, add the sweetened condensed milk to the pan. Stir well to combine the flavors. Then, gradually add the grated ricotta cheese (or paneer) to the mixture, stirring continuously to ensure a smooth consistency.

Step 3: Incorporate Milk and Milk Powder

  • Next, pour in the skimmed milk and mix it well with the mango kalakand mixture. This will help to loosen the consistency and add a creamy element to the dessert. Additionally, sprinkle the milk powder over the mixture and stir it in thoroughly.

Step 4: Infuse with Cardamom Flavor and Pistachios

  • To impart a fragrant touch, sprinkle the cardamom powder over the mixture and give it a good mix. The aroma of cardamom will elevate the flavors of the dessert. Then, add the chopped pistachios for a delightful crunch and extra visual appeal.

Step 5: Set and Garnish

  • Transfer the prepared mango kalakand mixture to a greased tray or plate. Flatten it evenly using the back of a spoon or a spatula. Allow it to cool and set for a few hours. Once set, cut it into desired shapes and garnish with silver varq and additional pistachios for a stunning presentation.

Notes

  • Use ripe, aromatic mangoes for the best flavor. Ensure that they are not overly fibrous.
  • Grate the paneer or ricotta cheese finely to ensure a smooth texture.
  • Adjust the sweetness according to your preference by adding more or less condensed milk.
  • For a creamier texture, use whole milk instead of skimmed milk.
  • Experiment with different garnishing options like shredded coconut or saffron strands for variety.
