  • ¼ cup sour cream or softened cream cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika for a warm, smoky kick
  • Salt and freshly ground black pepper to taste

Step 1: Gather Your Ingredients

  • Start by collecting everything you need. This makes the process smoother and ensures you don’t misplace anything important.

Step 2: Prepare the Filling

  • In a large bowl, combine your shredded chicken, cilantro, green onions, garlic powder, smoked paprika, salt, and pepper. If you opt for sour cream or cream cheese, fold that in to make the mixture creamy. Stir everything until well mixed.

Step 3: Heat Your Pan

  • Place a skillet over medium heat. You want it warm enough to toast the tortillas without burning them.

Step 4: Assemble the Quesadillas

  • Lay one tortilla in the skillet. Sprinkle a thin layer of cheese on the bottom. Next, spoon some of your chicken mixture on top, ensuring it's evenly spread. Top with another layer of cheese. Place a second tortilla on top.

Step 5: Cook Until Golden

  • Let the quesadilla cook for about 3-4 minutes. You’re looking for golden-brown spots. Use a spatula to carefully flip it over. Cook the other side for another 3-4 minutes.

Step 6: Serve and Enjoy

  • Once both sides are crispy, take them off the heat. Cut into wedges, and serve with salsa, guacamole, or additional sour cream.

  • Preheat Your Pan: Ensuring your pan is hot allows for that perfect crunch.
  • Don’t Overstuff: Less is often more. Too much filling can make flipping difficult.
