Today, I’m excited to dive into one of my all-time favorite recipes – kale tonic fresh juice. Before you scrunch your face at the thought of kale in your drink, remember what my mom used to say: “Never judge a juice by its green color!” This concoction isn’t just a green splash in a glass; it’s a refreshing, nutrient-packed powerhouse.

- 3 cups of filtered water
- 1 tablespoon fresh ginger – peeled and grated
- 1 tablespoon honey
- 4 hearty kale leaves – stems trimmed away
- 2 Fuji apples – cored seeds removed, and coarsely chopped
- 1 English cucumber – coarsely chopped
- Juice of 1 lemon or more, based on preference
