Equipment

  • Oven
  • Baking sheet
  • Mixing bowl
  • Oven mitts or kitchen towel
  • Serving Dish

Ingredients

  • ½ teaspoon onion powder
  • 1 16 ounces bag of frozen Costco Normandy Vegetables
  • 1 Tablespoon extra virgin olive oil
  • Salt and Pepper
  • ½ teaspoon garlic powder

Instructions

Step 1: Preheat the Oven and Prepare the Baking Sheet

  • Start by preheating your oven to 450°F (232°C). As the oven heats up, place a baking sheet inside to get it nice and hot.

Step 2: Season the Vegetables

  • Take the 16-ounce bag of frozen Costco Normandy Vegetables and pour them into a mixing bowl.
  • Drizzle 1 tablespoon of olive oil over the vegetables and toss them gently to coat evenly.
  • Season the vegetables with salt, pepper, garlic powder, and onion powder according to your taste preferences. You can get creative with your seasonings here!

Step 3: Arrange on the Hot Baking Sheet

  • Carefully remove the hot baking sheet from the oven. Be sure to use oven mitts or a kitchen towel to handle it.
  • Spread the seasoned vegetables out in a single layer on the hot baking sheet. This helps them roast evenly and develop a delicious golden brown color.

Step 4: Roast the Vegetables

  • Place the baking sheet back into the preheated oven and let the vegetables roast for 15 minutes.
  • After 15 minutes, remove the baking sheet from the oven and give the vegetables a good stir to ensure they cook evenly on all sides.

Step 5: Continue Roasting

  • Put the baking sheet back into the oven and continue roasting the vegetables for another 10-15 minutes.
  • Keep an eye on them as they cook. You’ll know they’re done when the edges are golden brown and crisp.

Step 6: Check for Doneness

  • Some vegetables may cook faster than others, depending on their size and density. Use your judgment to determine when they’re ready.
  • If you’re unsure, you can always test a few pieces with a fork or taste them to see if they’re cooked to your liking.

Step 7: Serve and Enjoy

  • Once the vegetables are roasted to perfection, remove them from the oven and transfer them to a serving dish.
  • Serve the delicious roasted Costco frozen vegetables as a side dish or as part of your favorite meal.
  • Enjoy the flavorful and nutritious goodness straight from your oven to your plate!

Notes

  • Do not overcrowd the skillet to allow the vegetables to cook evenly.
  • Add a splash of lemon juice or balsamic vinegar for a tangy twist to the dish.
  • Experiment with different seasonings such as smoked paprika or Italian herbs for a variety of flavors.
  • For a crispier texture, broil the vegetables in the oven for a few minutes after sautéing.
  • To enhance the dish’s protein content, mix in some grilled chicken or tofu at the end of cooking.
