  • – 2 large eggs
  • – 1 cup mashed ripe bananas about 2 ½ medium or 2 large bananas
  • – ¼ cup any milk of choice or water
  • – 1 teaspoon baking soda NOT baking powder; they are not interchangeable
  • – 1 teaspoon pure vanilla extract
  • – ½ teaspoon sea salt
  • – ½ teaspoon ground cinnamon plus extra to swirl on top
  • – 1 ¾ cups white whole wheat flour or regular whole wheat flour
  • – ⅓ cup melted coconut oil or extra-virgin olive oil or premium vegetable oil
  • – ½ cup honey or pure maple syrup
  • – ½ cup mix-ins such as chopped walnuts pecans, chocolate chips, raisins, chopped dried fruit, or fresh banana slices
  • – 2 tablespoons ground flaxseed

Instructions
 

Step 1: Preheat Your Oven

  • First, preheat your oven to 350°F (175°C). This step is crucial because it ensures even baking. You wouldn’t want a banana bread that’s burnt on the outside and gooey in the middle!

Step 2: Prepare Your Baking Pan

  • Grease a 9×5 inch loaf pan with a little oil or line it with parchment paper for easy removal. This step can save you from the drama of sticking bread later.

Step 3: Mix the Wet Ingredients

  • In a large mixing bowl, combine the mashed bananas, eggs, milk (or water), melted oil, honey (or maple syrup), and vanilla extract. Use a fork or whisk to mix everything until smooth. The bananas should blend in seamlessly with the rest.

Step 4: Combine the Dry Ingredients

  • In another bowl, mix the flour, baking soda, cinnamon, sea salt, and ground flaxseed together. Ensure there are no lumps. This creates a uniform distribution of flavors and nutrients.

Step 5: Combine Both Mixtures

  • Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. Be cautious not to overmix; a few lumps are perfectly fine! If you’re adding walnuts or chocolate chips, here’s the moment to fold them in.
