Ingredients
  

  • Lettuce to taste
  • Spicy Noodles to taste
  • Sriracha Sauce to taste
  • 3 Sheets of Rice Paper
  • Cucumber to taste

Accompanying Sauce:

  • Maple Syrup to taste
  • Peanut Butter to taste
  • Soy Sauce to taste

Instructions
 

Step 1: Prepare the Filling

  • Start by cooking the spicy noodles according to the package instructions. Once cooked, drain and set aside to cool. While the noodles cool, wash and prepare the lettuce and cucumber by thinly slicing them into long, julienne-like strips.

Step 2: Soak the Rice Paper

  • Fill a shallow dish or pie plate with warm water. Dip one sheet of rice paper into the water and let it soak for about 15 seconds, or until it becomes pliable. Place the soaked rice paper onto a clean, damp kitchen towel or a cutting board.

Step 3: Assemble the Spring Rolls

  • Arrange a small portion of the cooked noodles, lettuce, and cucumber on the lower portion of the rice paper. Drizzle some Sriracha sauce over the filling for that spicy kick. Carefully fold the sides of the rice paper towards the center and then roll the bottom edge tightly over the filling. Continue rolling until the entire sheet is wrapped into a neat roll.

Step 4: Repeat and Serve

  • Repeat the soaking, assembling, and rolling process with the remaining rice paper sheets and filling. Once all the rolls are prepared, slice them in half diagonally and arrange them on a platter. Serve immediately with the accompanying sauce.

Notes

  • – Soaking the rice paper for too long can make it too soft and difficult to handle. Aim for a pliable texture.
  • – To prevent the rice paper from sticking to your work surface, place it on a clean, damp kitchen towel or a cutting board.
  • – Customize the level of spiciness by adjusting the amount of Sriracha sauce you drizzle over the filling.
  • – For an extra burst of flavor, consider adding some fresh herbs like cilantro or mint to the filling.
  • – If you prefer a vegetarian version, you can swap the spicy noodles for tofu or tempeh, marinated in your favorite spicy sauce.
