  • ½ teaspoon onion powder
  • 4 cups peeled and diced sweet potatoes
  • 4 cups fresh broccoli florets Salt to taste
  • 2 tablespoons Cajun spice blend
  • 2 –3 fresh garlic cloves finely minced
  • 1 teaspoon smoked paprika
  • 4 medium boneless chicken breasts

Instructions
 

Step 1: Preheat the Oven

  • Start by preheating your oven to 400°F (200°C). This temperature will help the sweet potatoes get perfectly roasted.

Step 2: Prepare the Chicken

  • Pound the chicken breasts until they are about half an inch thick. This ensures they cook evenly. Season them with salt, Cajun spice blend, and smoked paprika. Remember, seasoning is key!

Step 3: Chop the Vegetables

  • While the chicken is resting, peel and dice your sweet potatoes into cubes. Cut the broccoli into florets. Keeping them about the same size will ensure they cook uniformly.

Step 4: Sauté the Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté the chicken for about 5-7 minutes on each side until golden brown and cooked through. Once done, set it aside.

Step 5: Roast the Vegetables

  • In the same skillet, add the remaining olive oil. Toss in the sweet potatoes and broccoli. Sprinkle with salt, onion powder, and garlic. Roast them in the oven for 25-30 minutes until they're tender and slightly crispy.

Step 6: Combine and Serve

  • After the vegetables are done, slice the chicken into strips. Toss everything together in a large bowl, drizzle with lemon or lime juice, and give it a good mix. Serve it warm, and enjoy
