Ingredients
  

  • 1 tbsp of olive oil
  • 2 cloves of garlic minced to a paste
  • 1/2 cup of finely chopped onions
  • 1/2 bell pepper chopped into small pieces
  • 2 cans of pinto beans thoroughly rinsed and drained
  • 1 cup of vegetable broth for added depth
  • 1/2 cup of corn kernels
  • 1 tsp of Cajun spice blend
  • 1/2 tsp of smoked paprika
  • 1/2 tsp of dried thyme
  • 1/2 tsp of dried oregano
  • 1/2 tsp of freshly ground black pepper
  • 1/4 tsp of cayenne pepper
  • 1/4 tsp of sea salt
  • 1/2 tsp of cumin

Instructions
 

Step 1: Sauté Aromatics

  • In a large pot, heat the olive oil over medium heat. Add the chopped onions and bell pepper. Sauté for about 5 minutes, or until the onions become translucent. This process releases sweetness and builds the flavor base.

Step 2: Add Garlic

  • Stir in the minced garlic and cook for an additional minute. The garlic adds a fragrant aroma that makes cooking feel welcoming. Be careful not to burn it!

Step 3: Combine Beans and Broth

  • Add the drained pinto beans to the pot, along with the vegetable broth. Stir everything together until well combined. The beans should give a delightful earthy aroma right away.

Step 4: Spice It Up

  • Now, it’s time to sprinkle in the seasoning: Cajun spice blend, smoked paprika, thyme, oregano, black pepper, cayenne, sea salt, and cumin. Mix thoroughly. This colorful sprinkle adds character to the dish.

Step 5: Simmer

  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30 minutes. This step allows the flavors to develop and the beans to soak it all up.

Step 6: Add Corn

  • After 30 minutes, stir in the corn kernels. They will add a hint of sweetness and a pleasing texture to the dish. Simmer for another 5 minutes.

Step 7: Taste and Adjust
