Ingredients
  

For the Biscuit

  • 1 ½ sticks of cold salted butter diced
  • 1 cup buttermilk
  • 1 large egg plus 1 egg yolk for an egg wash
  • ¾ cup fresh blueberries
  • 2 cups self-rising flour
  • 1 heaping tablespoon of baking powder
  • ½ teaspoon of baking soda
  • ½ teaspoon sea salt
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely grated lemon zest

For the Glaze

  • 1 tablespoon melted butter
  • 1 ½ cups powdered sugar
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon buttermilk

Instructions
 

Step 1: Preheat the Oven

  • Start by preheating your oven to 400°F (200°C). This ensures that your biscuits will bake evenly and achieve that perfect golden brown color.

Step 2: Prepare the Dough

  • In a large mixing bowl, combine the self-rising flour, baking powder, baking soda, sea salt, and granulated sugar. Mix well so that everything is evenly distributed. Next, add in the diced cold butter. Use a pastry cutter or your fingers to work the butter into the flour mixture, which should resemble coarse crumbs.

Step 3: Add Wet Ingredients

  • In another bowl, whisk together the buttermilk, large egg, vanilla extract, and lemon zest. Pour this mixture into the dry ingredients. Stir until just combined—be careful not to overmix! Gently fold in the fresh blueberries. It’s okay if some berries burst; that just adds to the flavor.

Step 4: Shape the Biscuits

  • Turn the dough out onto a lightly floured surface. Gently knead it just until it comes together. Pat the dough into a ¾-inch thick rectangle. Cut out rounds using a biscuit cutter and place them on a lined baking sheet, leaving some space between each biscuit.

Step 5: Apply Egg Wash

  • In a small bowl, whisk the egg yolk with a splash of water. Brush this mixture over the tops of the biscuits. This will give them that lovely sheen when baked.

Step 6: Bake

  • Place the baking sheet in the oven and bake for 15-20 minutes or until golden brown. Keep an eye on them—nothing worse than overbaked biscuits!

Step 7: Prepare the Glaze

  • While the biscuits are in the oven, melt the butter in a small bowl. Whisk in the powdered sugar, lemon juice, and buttermilk until smooth. Once the biscuits cool slightly, drizzle the glaze on top.

Notes

  • Chill Your Butter: The colder the butter, the flakier your biscuits will be. Chill it in the freezer for a few minutes before dicing for best results.
  • Don’t Overmix: Overmixing can lead to tough biscuits. It’s okay to leave some lumps; they’ll help create that desired texture.
  • Fresh Blueberries are Key: Go for fresh blueberries whenever possible. Frozen berries might yield too much moisture, which could affect the texture of your biscuits.
  • Experiment with Zest: While lemon is a fantastic complement, don’t hesitate to try orange or even lime zest for a different flavor profile.
  • Keep an Eye on the Oven: Ovens can vary, so start checking for doneness at the 15-minute mark to avoid burning.
