Today, I’m excited to share one of my absolute favorite recipes with you: BBQ chicken thighs. Packed with flavor and perfect for any occasion, this dish is the kind of comfort food that warms both the stomach and the soul.

- Here’s what you’ll need to whip up this mouthwatering dish:
- - 8-10 bone-in skin-on chicken thighs (or drumsticks)
- - 2 cups of your favorite BBQ sauce I recommend a blend with onion and garlic notes!
- - 1-2 tablespoons of extra virgin olive oil or canola oil for that initial sear
- - 1 teaspoon smoked paprika to add depth
- - Salt and freshly cracked pepper to taste

Step 2: Prepare the Chicken
While the oven heats, drizzle the chicken thighs with olive oil in a large mixing bowl. Use your hands to mix things well, ensuring every piece gets a loving coat of oil. Next, sprinkle them liberally with salt, pepper, and smoked paprika. This adds a smoky flavor that complements the barbecue sauce beautifully.
Step 3: Bake the Chicken
Place the seasoned chicken, skin side down, on a rimmed baking sheet. Bake for 25 minutes. This initial cooking time begins to render the fat in the skin, making it crispy and delightful.

Using a basting brush, generously coat the exposed side of the chicken with barbecue sauce. Then, gently flip each piece over with a spatula, being careful not to tear the skin. Coat the other side with the sauce as well.

Return the chicken to the oven for an additional 7 minutes. Remove once time is up, and again baste the top with sauce. Put the chicken back in for another 7 minutes. Repeat this basting process one more time for a total of three basting applications. This is where that glorious sticky glaze comes to life!
Step 7: Ensure Proper Cooking
By now, the chicken should be beautifully glistening. After 46 minutes of cooking, it’s crucial to check doneness with a meat thermometer inserted into the thickest part of the meat. The temperature should reach at least 165 degrees F, but for dark meat like chicken thighs, aim for 180 to 190 degrees for optimal tenderness.
