Step 2: Prepare the Batter

  • In a large mixing bowl, combine your mashed bananas, cottage cheese, eggs, and vanilla extract. Whisk these together until you have a lump-free mixture. Next, add your oat flour, baking powder, cinnamon, lemon zest, and a pinch of sea salt. Stir until everything is well combined and you’ve created a thick batter. If you’re adding honey or maple syrup for extra sweetness, now is the time to add that in.

Step 3: Portion and Add Blueberries

  • Pour approximately 1/2 cup of the batter onto your preheated waffle iron—make sure not to overload it! Sprinkle a few blueberries directly on top of the batter. This adds a lovely burst of flavor and a beautiful pop of color.

Step 4: Cook to Perfection
