Equipment

  • Baking pan
  • Small bowl
  • Oven

Ingredients

  • - 4 boneless skinless chicken breasts
  • - 8 slices of regular-cut bacon avoid the thick cut
  • - 1/4 cup of brown sugar
  • - 2 teaspoons of smoked paprika
  • - 1/2 teaspoon of garlic powder
  • - 1/4 teaspoon of onion powder
  • - 1/2 teaspoon of black pepper
  • - 1/2 teaspoon of salt
  • - 1 tablespoon of fresh parsley chopped
  • - 1 teaspoon of Dijon mustard adds a nice tangy note
  • - 1/2 teaspoon crushed red pepper flakes for a subtle kick

Instructions

Step 1: Preheat the Oven

  • Set your oven to 375°F (190°C). Getting it hot before adding your chicken helps achieve that perfect bacon crispiness while ensuring the chicken cooks evenly throughout.

Step 2: Mix the Spice Blend

  • In a small mixing bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, salt, pepper, and Dijon mustard. This spice blend will be the heart of your flavor profile. Mix until everything is well blended and set it aside.

Step 3: Season the Chicken

  • Take your chicken breasts and rub half of the prepared spice mixture all over them. Make sure every inch is covered to maximize flavor. If you have time, let this sit for 10-15 minutes to allow the spices to penetrate the chicken.

Step 4: Wrap the Chicken

  • Now it's time to wrap! Each chicken breast should be snugly encased in about two slices of bacon. The bacon helps keep the chicken moist and gives it that coveted crispy exterior. Place each wrapped chicken breast, seam side down, into a baking pan or an ovenproof skillet.

Step 5: Sprinkle the Remaining Spice Mixture

  • Take the rest of your spice blend and sprinkle it generously over the top of each chicken breast. This addition will help caramelize the bacon and add an extra layer of flavor as it cooks.

Step 6: Bake and Baste

  • Put the pan in your preheated oven and let it bake for 25-30 minutes. As the chicken bakes, baste the chicken occasionally with the drippings from the pan to keep it juicy.

Step 7: Broil for Extra Crispiness

  • If you’re someone who loves a super crispy bacon finish, switch the oven to broil mode during the last 1-2 minutes of cooking. Keep a close eye on it; it can go from perfectly crispy to burnt in seconds.

Step 8: Garnish and Serve

  • Once it’s out of the oven, sprinkle the chicken with freshly chopped parsley for that touch of color and freshness. Now it's time to dig in!

Notes

- Choose Regular Cut Bacon: Sticking to regular-cut bacon ensures that the chicken cooks evenly without the bacon being too thick.
- Marinate if Possible: Allowing the chicken to sit in the spice mix for a while enhances the flavor.
- Use a Meat Thermometer: For perfectly cooked chicken, ensure the internal temperature hits 165°F (74°C).
- Don’t Overcrowd the Pan: Give each chicken piece some room in the pan to allow for proper heat circulation.
- Experiment with Seasonings: Feel free to swap some spices to make it your own; cumin or chili powder can add an exciting twist!
