Ingredients
  

  • 1 and 1/2 tsp. kosher salt
  • - 1 tsp. freshly ground black pepper
  • - 2 Tbsp. extra-virgin olive oil
  • - A 2 lb. boneless pork shoulder or pork butt roast
  • - 1 cup low-sodium chicken broth or water
  • - 1 tsp. onion powder
  • - 1 large onion cut into quarters
  • - 2 tsp. smoked paprika for added depth and flavor
  • - 1 Tbsp. Worcestershire sauce for a hint of umami

Instructions
 

Step 1: Season the Pork

  • In a small mixing bowl, combine the kosher salt, pepper, onion powder, and smoked paprika. This spice mix enhances the flavor of the pork, ensuring that every bite is delicious. Take your pork shoulder and rub this mixture all over, making sure to cover it completely. This step is essential for building flavor!

Step 2: Sauté the Pork

  • Now it’s time to heat things up! Turn on the Instant Pot and select the Sauté function. Once the display shows “Hot,” add the olive oil. Let it warm for about 30 seconds. Carefully place the seasoned pork roast in the pot and sear it on all sides. This should take about four minutes per side. You're aiming for a nice brown crust to lock in those delicious flavors.

Step 3: Deglaze the Instant Pot

  • Once the pork has been browned, press "Cancel" to turn off the sauté function and remove the roast from the pot, placing it on a plate. Now, it’s time to add the chicken broth (or water) and the Worcestershire sauce to the Instant Pot. Use a wooden spoon or rubber spatula to scrape up any browned bits from the bottom of the pot. These bits add incredible flavor to the broth!

Step 4: Prepare to Pressure Cook

  • Next, take the trivet and place it in the bottom of the Instant Pot. Lay the roast on top of the trivet, then arrange the quartered onions around the pork. This will allow the pork to cook evenly while infusing some flavor into the onions at the same time.

Step 5: Pressure Cook the Pork

  • Cover the Instant Pot, sealing the lid tightly. Set the steam release valve to the “Sealing” position. Select the Meat/Stew or Pressure Cook button, and set the timer for 30 minutes. Take a moment to admire your work; you’re almost there!

Step 6: Release the Pressure

  • When the cooking cycle is complete, allow the Instant Pot to naturally release pressure for 10 minutes. After this time, carefully switch the steam release valve to “Venting” for a quick release of any remaining steam. Once the steam has fully released and the safety button has dropped, carefully remove the lid.

Step 7: Check the Temperature

  • Using tongs, remove the pork from the Instant Pot and place it on a rimmed plate to let it rest for about 10 minutes. The internal temperature should ideally be between 180-190˚F for maximum tenderness.

Step 8: Optional Crisping Step

  • If you’d like to enhance the crust on your pork, preheat your oven to 425˚F while the roast rests. Transfer the pork to a baking sheet and let it crisp in the oven for about 10 minutes.

Step 9: Slice and Serve

  • If you’re skipping the oven crisping, transfer the roast to a cutting board. Using a sharp knife, carve it into half-inch slices. Time to dig in!
