- - A 2 lb. boneless pork shoulder or pork butt roast
- - 1 cup low-sodium chicken broth or water
- - 1 tsp. onion powder
- - 1 large onion cut into quarters

Step 1: Season the Pork
In a small mixing bowl, combine the kosher salt, pepper, onion powder, and smoked paprika. This spice mix enhances the flavor of the pork, ensuring that every bite is delicious. Take your pork shoulder and rub this mixture all over, making sure to cover it completely. This step is essential for building flavor!
Step 2: Sauté the Pork
Now it’s time to heat things up! Turn on the Instant Pot and select the Sauté function. Once the display shows “Hot,” add the olive oil. Let it warm for about 30 seconds. Carefully place the seasoned pork roast in the pot and sear it on all sides. This should take about four minutes per side. You're aiming for a nice brown crust to lock in those delicious flavors.
Step 3: Deglaze the Instant Pot

Step 4: Prepare to Pressure Cook

Step 5: Pressure Cook the Pork
Cover the Instant Pot, sealing the lid tightly. Set the steam release valve to the “Sealing” position. Select the Meat/Stew or Pressure Cook button, and set the timer for 30 minutes. Take a moment to admire your work; you’re almost there!
Step 6: Release the Pressure
When the cooking cycle is complete, allow the Instant Pot to naturally release pressure for 10 minutes. After this time, carefully switch the steam release valve to “Venting” for a quick release of any remaining steam. Once the steam has fully released and the safety button has dropped, carefully remove the lid.
